Silky steamed eggs topped with tender prawns and finished with warm, savoury broth. Light, high-protein, and comforting, this nourishing dish is perfect on its own or paired with rice, kimchi, and Super Beauty Greens for a balanced, feel-good meal.

Ingredients (1 serve)

2 large eggs
1 tsp soy sauce
40 ml water
80 g raw prawns, peeled & deveined
½ cup chicken broth
1 spring onion, thinly sliced

Method

Whisk eggs: In a bowl, whisk together the eggs, soy sauce and water until smooth and well combined.

Steam eggs: Pour the mixture into a heatproof bowl or ramekin. Place in a steamer over gently simmering water, cover, and steam for 8–12 minutes, or until just set with a slight wobble.

Add prawns: Place prawns on top of the cooked egg, cover again and steam for a further 2–3 minutes, or until prawns are just cooked through.

Finish & serve: Gently pour warmed chicken broth over the eggs, top with spring onions and enjoy with a side of Super Beauty Greens. If desired, also serve with white rice and a side of kimchi.
