This vibrant Shakshuka is a cozy, one-pan meal of eggs gently poached in a spiced tomato, capsicum, and onion sauce with cumin and garlic. Finished with salty feta, fresh parsley, and toasted sesame seeds, it’s perfect served with crisp toast for scooping—and paired with a refreshing glass of Tropical Punch Super Beauty Greens.
Ingredients
1/2 brown onion, diced
1/2 red capsicum, diced
200g chopped tomatoes
1 tsp cumin
1/2 tsp garlic powder
Salt & pepper, to taste
2 eggs
25g feta cheese
Parsley + toasted sesame seeds, to garnish
1 slice toast
1 serve Tropical punch Super beauty greens
Instructions
Heat a small pan over medium heat and lightly spray with olive oil.
Add the onion and capsicum. Sauté for 3–4 minutes or until softened.
Add the chopped tomatoes, cumin, garlic powder, salt, and pepper. Stir and cook for 2 minutes, then bring the sauce to a gentle simmer.
Make two small wells in the sauce and crack an egg into each.
Crumble the feta over the top.
Cook for 5–6 minutes, or until the eggs are done to your liking.
Meanwhile, add 1 serve of Super Beauty Greens to a glass of water and stir to dissolve.
Garnish the shakshuka with chopped parsley and toasted sesame seeds. Serve with toast.
