Sweet, sticky, and perfectly spiced, these Honey Roasted Carrots bake until tender and lightly caramelised with cumin, garlic, and a drizzle of honey. Served on a creamy hummus base and finished with crunchy sesame, juicy pomegranate seeds, and fresh parsley, it’s an easy, flavour-packed plate for two—best enjoyed with a refreshing glass of Beautiful Energy on the side.

Ingredients

250g carrots, peeled
Olive oil spray
1 tsp cumin
1 tsp garlic powder
1 tsp honey
Salt & pepper, to taste
1/2 cup hummus
1 tsp toasted sesame seeds
2 tbsp pomegranate seeds
Parsley, to garnish
2 serves Beautiful Energy powder

Instructions

Preheat the oven to 180°C.
Peel the carrots and place them on a small baking tray. Spray with olive oil.
Sprinkle over the cumin, garlic powder, salt, and pepper. Drizzle with honey and toss to coat well.
Bake for about 35 minutes, or until the carrots are tender and lightly caramelised.
Meanwhile, add one serve of Beautiful Energy powder to each glass of water and stir to dissolve.
Spread the hummus over the base of a serving plate.
Arrange the roasted carrots on top, then garnish with pomegranate seeds, parsley, and toasted sesame seeds.
