    Bring festive cheer to your kitchen with these cozy Christmas gingerbread cookies – perfectly spiced, under 100 calories each, and boosted with The Collagen Co Glow Shake for a protein-packed twist. Soft on the inside and golden on the edges, they’re the ultimate guilt-free holiday treat. Decorate with icing and festive props for the perfect Christmas snack or gift!

    Makes 16 cookies

    Ingredients:

    ½ cup almond flour
    2 tbsp flaxseed meal
    2 scoops Collagen Co Glow Shake
    ¼ cup plain flour (plus extra for rolling)
    1 small egg (or ½ large egg, beaten)
    1 ½ tbsp sugar-free maple syrup
    25 g butter, melted
    1 tbsp brown sugar (or coconut sugar)
    1 tsp cinnamon
    ¼ tsp ginger (or ½ tsp if you like it spicy!)
    ¼ tsp nutmeg
    ½ tsp baking powder
    Dash of warm water, if needed

    Directions:

    Preheat oven to 160°C fan-forced. Line a baking tray with baking paper.
    In a mixing bowl, combine all dry ingredients (almond flour, flaxseed meal, Collagen Co Glow Shake, plain flour, spices, baking powder).
    Add wet ingredients (egg, melted butter, sugar-free maple syrup, brown sugar) and mix until a dough forms. Add a dash of warm water if the dough is too crumbly.
    Roll dough between two sheets of baking paper, lightly dusted with flour to prevent sticking.
    Cut into small gingerbread shapes (~16 cookies).
    Bake for 12–15 minutes, or until lightly golden around the edges. Keep an eye on them — ovens vary!

    Optional: Decorate with frosting or icing (I used ready-to-go icing from Coles/Woolworths).
