Chicken Meatballs with Pesto Zucchini Noodles with Greens

    Juicy chicken meatballs served with fresh pesto zucchini noodles and your favourite Beauty Energy Flavour. A simple, high-protein meal prep that’s light, flavour-packed and perfect for busy weeks.

    Ingredients (serves 4)

    For the Meatballs:

    500g chicken mince (lean)
    1 egg
    1 tbsp flaxseed meal
    ¼ cup almond meal 
    ½ tsp garlic powder
    ½ tsp onion powder
    2 tsp mixed herbs
    Salt & pepper to taste

    For the Zucchini Noodles:

    2 medium zucchinis
    5 tbsp pesto
    Olive oil (optional)
    10g parmesan

    Method

    Preheat oven to 180°C and line a baking tray with baking paper.

    In a large bowl, combine chicken mince, egg, flaxseed meal, almond meal, garlic powder, onion powder, mixed herbs, salt and pepper. Mix until just combined.

    Roll mixture into evenly sized meatballs and place onto the prepared tray.

    Bake for 18–22 minutes or until golden and cooked through.

    While the meatballs are baking, spiralise the zucchinis into noodles.

    Heat a non-stick pan over medium heat. Add zucchini noodles and sauté for 2–3 minutes until just tender (avoid overcooking to prevent excess moisture).

    Stir pesto through the warm zucchini noodles until evenly coated.

    Serve meatballs over pesto zucchini noodles. Top with parmesan if desired.
