Ingredients (Makes 2 Serves)

1 tbsp vegetable oil (peanut or canola oil works too)
150g ground pork
2 garlic clove, minced
2 tsp ginger, minced
1/4 cup scallions/shallots, finely chopped
4 tsp chili bean sauce (or sriracha for a milder option)
400g firm tofu, cut into cubes

Sauce:

1 cup water
1 tbsp cornstarch (mixed with a splash of water for slurry)
1/2 tsp chicken or vegetable stock powder
1 tbsp soy sauce
1/2 tbsp sugar
1 tbsp hoisin sauce
2 tbsp Chinese cooking wine
1 tsp sesame oil

Serve with: 75g cooked jasmine rice (per serve)

Method:

Heat oil in a pan or wok over medium-high heat.
Add garlic and ginger, stir-frying for about 10 seconds until fragrant.
Add scallions/shallots and cook for another 30 seconds.
Add the ground meat and cook until browned, breaking it up as it cooks.
Stir in the chili bean sauce and cook for 30 seconds.
In a small bowl, mix the cornstarch with a splash of water, then add the remaining sauce ingredients and stir well.
Gently fold in the tofu and pour in the prepared sauce.
Stir carefully and simmer for 1–2 minutes until the sauce thickens.
Serve hot with steamed rice.
