Mexican Beef & Sweet Potato Bake

This hearty one-dish wonder is your go-to for a protein-packed meal with bold flavour and minimal fuss. Juicy lean beef, black beans, and tender sweet potato are simmered in a spiced tomato base, then topped with melted Mexican cheese for the ultimate comfort factor. Finished with light sour cream and fresh coriander, it’s a deliciously satisfying way to nourish and refuel—perfect for busy weeknights or meal prep.

Ingredients (Makes 1 Serve)

1 tbsp olive oil
½ onion (diced)
1 clove garlic (minced)
1 tbsp taco seasoning
150g lean beef mince
½ cup crushed tomatoes
150g diced sweet potato
½ cup black beans (rinsed and drained)
½ cup Mexican cheese (shredded)
2 tbsp light sour cream
1 tbsp fresh coriander (chopped for garnish)

Method:

Heat olive oil in a pan over medium heat. Add diced onion, garlic, and beef mince, cooking until the beef is browned and the onion is softened.
Stir in taco seasoning and cook for another 1-2 minutes until fragrant.
Add crushed tomatoes and bring to a simmer. Let it cook for 5-7 minutes to combine the flavors.
Stir in the diced sweet potato and cook for an additional 5 minutes until slightly softened.
Stir in the black beans, then transfer the mixture to an oven-safe dish.
Top with shredded Mexican cheese and bake in the oven at 180°C (350°F) for about 10-12 minutes, until the cheese is melted and bubbly.
Remove from the oven and top with light sour cream and fresh coriander. Serve hot.
