This Broccoli Prawn Toast is a vibrant, high-protein meal that feels fancy but takes minutes. Creamy yoghurt-mixed broccoli gets piled onto crispy sourdough, then topped with juicy pan-seared prawns, fresh avocado, sweet chilli drizzle, and a sprinkle of sesame and parsley. Ingredients

6–8 large prawns
¾ cup steamed broccoli, chopped
1 tbsp diced onion
¼ cup plain yoghurt
1 tbsp sweet chilli sauce (plus extra to drizzle)
Salt, to taste
1 large slice sourdough
¼ avocado, finely chopped
Sesame seeds and parsley, to serve
1 serve Beautiful Energy powder

Method

Heat a little olive oil in a pan over medium heat and cook the prawns for 1–2 minutes per side, until pink and opaque.

In a bowl, combine the broccoli, onion, yoghurt, sweet chilli sauce, and salt. Mix until creamy.

Toast the sourdough, then spread the creamy broccoli mixture over the toast.

Top with prawns, avocado, an extra drizzle of sweet chilli sauce, and finish with sesame seeds and parsley.

Add the Beautiful Energy powder to a glass of cold water, stir to dissolve, and enjoy alongside the toast.
