Makes 4 | Serves 2

250 g frozen chopped spinach, thawed overnight
2 eggs
100 g feta cheese, crumbled
Black pepper, to taste
4 spring roll pastry sheets
Olive oil spray
2 serves Beautiful Energy

Method

Add the thawed spinach to a colander and use your hands to squeeze out as much liquid as possible.

Transfer the spinach to a bowl. Add the eggs, feta, and black pepper, then stir well to combine.

Lightly spray one sheet of pastry with olive oil. Cut a slit from halfway down the pastry to the bottom edge.

Place about ½ cup of the spinach mixture onto the top-left section of the pastry. Fold the pastry up and over to form a parcel. Repeat with the remaining pastry and filling.

Heat a skillet over medium heat and lightly spray with oil. Add the spinach and feta parcels and cook for 3–4 minutes per side, or until golden and crispy.

Add 1 scoop of Beautiful Energy to each glass of water, stir to dissolve, and enjoy alongside the gozleme.
